Groundnut sweet

I missed me some sugar coated groundnuts- groundnut sweets as we call it in Cameroon. I decided to make some. Hope someone finds this very easy recipe useful. Enjoy!!!

  • Preparation time……5 mins
  • cooking time………….30-45mins
  • serves …………………8-10

Ingredients

  1. 1kg of groundnut
  2. 100g granulated sugar
  3. Half cup of water
  4. Cinnamon of vanilla as flavour (will do fine without)

Preparation method

  1. Fry the groundnuts or bake them for about 15mins at a temp of 180 degrees Celsius. Turn the gnuts in the oven from time to time to make sure they do not get burnt.
  2. Boil water and add sugar . Stir until sugar is well dissolved.
  3. Add groundnuts and flavour and stir until the water gets dry.
  4. As soon as the water is dry take the pot off the fire or the sugar starts to caramelize. Pour into a flat tray for it to get cold.
  5. Store in an air-tight container

Banana-nut Cake Recipe

  • Preparation time……10mins
  • Baking time………….45-50mins
  • serves …………………8-10

Ingredients

  1. 200g self raising flour
  2. 100g ground nuts (I like using hassle nut but any one should do just fine)
  3.  125g butter at room temp
  4. 100g sugar
  5. 3 ripe bananas
  6. 1 teaspoon baking powder
  7. 1 teaspoon baking soda
  8. 2 large eggs
  9. 1 cup of plain yoghurt (would still be fine without
  10. pinch of salt
  11. A flavour of you choice…(I use lemon back or cinamon)

Preparation method

  1. Preheat oven at 180 degrees Celsius
  2. Cream butter and Sugar until it looks fluffy and well mixed
  3. Add eggs one after another
  4. Marsh the banana and add into the butter, sugar egg mixture
  5. Add the plain yoghurt
  6. let it mix well for about 2mins
  7. In a big bowl mix the flour, baking powder, baking soda, salt, nuts and flavour. Add this to the wet ingredients. Just mix well enough for everything to be well incorporated. Note, the mixture may look hard and not very fluid but this is OK as it.
  8. Pour into a greased baking pan and bake for about 45-50 mins at 180 degrees Celsius. Make sure that a toothpick inserted comes out clean before taking the cake out to cool.
  9. Enjoy!!!

OK…,those who know me also know that eating healthy for me is not about being a size s. I care about being healthy and fit. By the ways, I am no guru. These are just stuff that work for me. What works for you?

1/2 lemon

Drinking water at breakfast has numerous benefits ranging from detoxifying to giving a glowing skin. To enjoy these benefits, it is also encouraged to drink lots of water through out the day.

 

What keeps me inspired?

Life in itself is sweet…lol. I mean, with family, friends and doing what you want to really do one should be happy. Right? Some days of course seem to be like spoil spots where one is simply down even though all is in place for happiness. What keeps me inspired on such days? I belief that in my might alone, I would not be able to pass such check points. I can say for myself, that prayer, faith and love have always seen me through. Nevertheless, staying inspired is a continuous journey!!! it is always so easy to feel demotivated. Keeping a goal ahead and constantly reminding ourselves why we would like to achieve this goal should do the trick. I always keep in mind that I can and I would. I just need to make the effort.
